The simplest and quickest is to use mp3wrap. Some annoyances include that it adds the text MP3WRAP to the output filename, and adds title, artist, album, and comment tags all about mp3wrap, which could be done more subtly.

mp3wrap mybook.mp3 cha*.mp3

Using sox is a good alternative and seems to processes the audio, taking longer but resulting in a smaller file.

sox cha*.mp3 mybook.mp3

We can also use ffmpeg to concatenate audio files with different encodings even.

ffmpeg -i "concat:cha01.mp3|cha02.mp3|cha03.mp3" -acodec copy mybook.mp3
